INSTRUCTIONS
Glen's Note: These three recipes were posted as a meal by Reggie. Lemon
Rosemary Chicken, Garlic Lover's Potatoes, Swiss Chard Topped W/ Marinated
Portobello Mushrooms.
This was a very good meal!! If you eat the Swiss Chard as part of a meal it
will fall into a low enough CFF percentage.
This is also good cold - right out of the refrigerator - for late night
snacking.
Scrub the potatoes well. If large, cut into thick slices. Steam for about 7
min, or until they are firm but slightly tender.
Pour oil into casserole dish. Add the steamed potatoes, garlic, shallot,
salt and pepper. Toss to mix well.
Bake, uncovered, in a preheated 350F oven for 30 min. Stir a couple of
times during baking so potatoes cook evenly.
If desired, garnish with freshly chopped rosemary or parsley.
Serves 4
These were very, very good!! Yes, even cold they were good.
