INGREDIENTS

7 c Peeled; cubed baking potato
6 Garlic cloves; peeled
1/2 c 2 % low-fat milk; (I used skimmed)
1/4 c Grated Parmesan cheese
2 tb Margarine
1/2 ts Salt
1/8 ts Pepper

INSTRUCTIONS

From: Cooking Light Annual Recipes 1997, page 276
Place potato and garlic in a medium saucepan. Cover with water, and bring
to a boil. Reduce heat. Simmer 20 minutes and drain. Return potato and
garlic to pan. Add milk, Parmesan cheese, margarine, salt and pepper; beat
at medium speed of an electric mixer until smooth. Yield: 8 servings, 3/4
cup size)
