INSTRUCTIONS
This is a very simple method of cooking spinach lighty with a little
additional flavor. Serve as a side with just about anything.
Heat the oil in a large saute pan ant when very hot, saute the garlic for 5
seconds. Add the spinach and stir for 1 minute over medium-high heat, until
it is wilted and just barely cooked. Swirl in the utter and season with
salt and pepper. Remove from the heat and drain off the excess liquid.
Yield: Serves 4
