Head garlic; (about 11-15 cloves), peeled |

Plumb tomatoes; peeled cored, seeded, cut up, up to 10 |

INSTRUCTIONS
In a baking dish with a lid, place the onion in the middle. Surround it
with the garlic, tomatoes. Sprinkle on the salt and basil. Drizzle all with
the olive oil. Make sure you coat the onion well. Cover and bake at 375~
for about 1 hour. Checking once to make sure it is not sticking, or
burning. When it is done, place all in a blender and puree for a few
minutes or until thick. Use over cooked broccoli, asparagus, potatoes, or
