INGREDIENTS

1 md Green Bell pepper; diced
1 md Red Bell pepper; diced
1 md Yellow Bell pepper; diced
4 Stalks celery; diced
2 Cucumbers; peeled and diced
28 Can Plum tomatoes; chopped with liquid
6 tb Lemon juice
2 tb Olive oil
3 c Cold water
1/4 c Italian parsley; chopped
1/2 c Fresh basil; chopped
1/2 ts Salt
1/4 ts Pepper
1 tb Tabasco sauce

INSTRUCTIONS

Combine all ingredients; mix well. Adjust seasonings. Serve chilled

NOTES : Variations: For a richer taste, add 2 to 3 tablespoons tomato
paste and a splash of red wine vinegar.
