INSTRUCTIONS
Prepare pasta in boiling salted water. Meanwhile,heat oil in a skillet
over medium heat until hot. Add garlic ,stirring for 1 minute.
Gradually add spinach and 2 tablespoons of water;cook,stiring
often,just until spinach wilts. Remove skillet from heat. When pasta
is done, remove 1 cup of pasta cooking liquid, drain pasta ,return to
pot. Add ricotta cheese, parmesan cheese, pepper,1/2 tsp salt,spinach
mixture and reserved cooking water. Toss until well blended. Garnish
