I love scones and am always looking for new recipes! I was thrilled to find
this one in my Sunday paper a few weeks ago - they are quite tasty.
Preheat oven to 350 degrees. Grease baking sheet; set aside. Into medium
bowl, sift together flour, sugar, baking powder and salt. In small bowl,
beat cream; fold in ginger. Fold liquid into dry ingredients; knead
briefly. Shape dough into eight 3 1/2 by 1/2 inch rounds on prepared baking
sheet. Brush tops with melted butter and sprinkle with brown sugar. Bake 12
to 14 minutes, until golden brown around ages. Makes 8 scones.
Low fat sour cream makes a good substitute for the whipping cream, but the
scones will need to be baked at 375 because of additional moisture.
