INGREDIENTS

1 c Unbleached flour — sifted
1 ts Baking powder
1 ts Baking soda
1/4 c Brown sugar — packed
1 ts Ginger
1/2 ts Cinnamon
1/2 ts Cloves
1/4 ts Salt
1/2 c Skim milk –at room
Temperature
2 Egg whites — whipped
1/2 tb Molasses
1/2 c Applesauce — at room
Temperature

INSTRUCTIONS

Prepare skillet with cooking spray and heat on medium until hot.  In a
mixing bowl, combine flour, baking powder, brown sugar, ginger, cinnamon,
cloves, and salt .  In another mixing bowl, combine milk, egg whites,
molasses, and applesauce.  Mix dry ingredients with wet ingredients just
until moistened.  Ladle in the batter, using 2 or more tablespoons per
cake.  Cook for 2 minutes, then flip carefully and cook for 2 minutes more.
Repeat with remaining batter.
