INSTRUCTIONS
Makes 6 cups In a large saucepan, heat oil over medium-high heat. Add
cumin seeds and stir until the seeds begin to pop, about 1 min. Add
ginger and stir until fragrant, about 30 secup Add curry powder and
stir until it is toasted, about 30 secup longer. Add chick peas,
tomatoes, honey, salt, pepper and 1-3/4 cup water; bring to a boil.
Stir in couscous, remove from the heat and cover. Let stand until the
liquid has been absorbed, about 5 min. With a fork, fluff the couscous
and stir in cilantro. Season with salt to taste. Copyright credit:
