Sifted all-purpose flour |

Grated lemon rind; optional OR 1 tbsp candied ginger, finely chopped, optional |
INSTRUCTIONS
Cream together butter, egg yolk, sugar, gouda, salt, vanilla and rind or
ginger if using. Mix together flour, pecans and nutmeg and add to creamed
mixture. Blend thoroughly. Roll in small balls the size of grapes. Press
flat with floured fork or floured flat bottom glass. Bake at 325 F for
about 15 to 20 minutes, until lightly browned. Cool on a rack. Makes 5 to 6
dozen wafers.
Note from top of recipe: Mildly cheesy and not-too-sweet are these unusual,
savory wafer cookies.
