What follows is Grandma DelCarlo's recipe for Biscotti: Blend butter,
shortening and sugar until smooth and creamy. Add eggs to cream, one at a
time; add vanilla and anise. Mix in flour with baking powder and salt; add
almonds. Form dough into 2 flat loaves on greased baking sheet (you maybe
able to make 3 flat loaves -- dimensions 3 inches wide x 12 inches long by
0.5-0.75 inches thick). Bake in 350 degree oven for 15-20 minutes. The
bottom should begin to brown and the dough should be firm. Remove from
oven and cut each loaf into diagonal strips (may 15-20 per loaf); return to
pan placing each cookie on its side. Bake 5-10 minutes. You want to toast
the cut edges. Toast both sides for crispy cookies and one side for softer
ones.
