INGREDIENTS

1 21-ounce can pork-and-beans
1 lg Onion,; finely chopped
1 12-ounce bottle ketchup
1 tb Yellow mustard
1 1/4 c Packed light brown sugar
1/4 c Molasses
1/2 c Sweet gherkin juice
1 ts Apple cider vinegar
Salt and ground pepper
1/2 lb Thickly sliced smoked bacon

INSTRUCTIONS

Preheat oven to 350 degrees. In a 2-quart casserole dish combine all
ingredients except bacon; season to taste with salt and pepper. Criss-cross
top with bacon strips. Cover with aluminum foil. Bake for 1 hour. Remove
foil and continue to bake 30 minutes longer. Serve hot or cold
