INGREDIENTS

1 Egg Yolk
100 g Selection of Berries
1 Vanilla Pod
50 Cream
50 g Sugar
150 Boiling Water
25 Sweet Wine
1 Lemon, juice

INSTRUCTIONS

Whisk the egg yolk over a bain marie using the boiling water, until it
doubles in volume and is thick and creamy. Fold in the remainder of
the ingredients. Glaze under a hot salamander / grill. Serve with
