INSTRUCTIONS
6 servings
1. In a medium saucepan, combine spelt berries and water. Bring to a boil,
then reduce heat and simmer for 1 hour, or until just render. Drain well
and chill.
2. In a large bowl, combine chilled spelt, onion, cucumber, red pepper,
dill, mint, olive oil, lemon juice, and garlic. Fold in feta cheese, if
desired. Season to taste with salt and pepper, and refrigerate until
served.
