INSTRUCTIONS
Set oven to 400/F or Mark 6. Line a 7 inch flan dish with the pastry and
bake blind for l0 minutes. Arrange the greengages, cut side down, in the
pastry case, and 5prinkle with the sugar, if desired. Beat the eggs and
cream together, and strain over the greengages. Cook for 30 to 35 minutes
or until the filling is golden and puffed up. Serve wazrm with extra cream,
if desired.
In the 18th century, Sir William Gage planted some unknown plum trees in
the orchard of his estate near Bury Saint Edmunds. They produced delicious
yellow green fruit that became known as Green Gages plums, later corrupted
to Greengage.
