INSTRUCTIONS
Now that catfish has become an "in" food, you will find it in the most
elegant grill houses. This recipe contains nothing fancy, but putting the
fish on a charcoal grill is just wonderful. Easy and quick, and very
flavorful.
Mix a bit of olive oil, lemon juice, salt and pepper together and whip to
the consistency of a salad dressing. Marinate the fish in this mixture for
1/2 hour before grilling. Grill over charcoal for about 5 minutes on a
side, or until the fish is lightly browned and begins to flake a bit. Do
not overcook.
