6-Ounce Salmon Fillets Or Steaks; cut 1/2-inch thick |

Roasted White Corn Salsa (Recipe Follows) |

Basil Cream (Recipe Follows) |

Cilantro Or Mint Sprigs |
INSTRUCTIONS
GARNISH
Whisk olive oil, zest, mint, salt and pepper together and marinate salmon
in mixture for 1 hour. At serving time, grill salmon over hot coals until
just done. Place on warm plates with a heaping tablespoon or two of corn
salsa on top, warm basil cream around and a garnish of herb sprigs. Serve
immediately
