INSTRUCTIONS
Grate the rind of the orange and one of the limes, then squeeze the juice.
Combine the juices and grated rind with the garlic, fresh chilli, mild
chilli powder, paprika, cumin, oregano, salt and olive oil. Mix with the
prawns and marinate for 30 minutes to one hour.
Skewer then grill on a charcoal fire if possible, otherwise grill indoors
or saut.. Serve immediately, each skewer garnished with chunks of papaya
and wedges of the remaining lime. Accompany with salsa.
