INGREDIENTS

1 lb Pig's Kidneys
4 oz Smoked Back Bacon, Derinded
2 oz Butter
1 tb Lemon Juice
3 tb Freshly Chopped Mixed Herbs
1 tb Soy Sauce

INSTRUCTIONS

Core the kidneys and chop into small pieces. Chop the bacon.
Melt the butter in a frying pan and add the lemon juice. Stir in the
chopped kidneys and bacon, and cook for 15 minutes.
Add 2 tablespoons chopped mixed herbs and the soy sauce to the frying pan
and continue to cook for 5 minutes. Transfer to a warmed serving dish, then
sprinkle the reamining herbs over the top. Serve Immeadiately.
