INSTRUCTIONS
SERVES 6 AS A DINNER SIDE DISH
This is quick and delicious (quick providing you have cooked the hominy
the day before). It is a nice dish from the South.
Place half of the hominy in a greased baking dish. Season to taste with
salt and pepper. Heat a frying pan, add the butter, and saut. the onions
until clear. Mix the onions and sour cream and place half of this mixture
over the hominy. Top with half of the cheese and repeat for the second
layer, topping the whole dish with the remaining cheese.
Bake uncovered at 350° for 40 minutes or until all is hot and bubbly.
