Meats 1 Servings

INGREDIENTS

3 Whole chicken breasts; split, (or leg quarters or any chicken pieces would be suitable for this)
1/2 c Flour
1 ts Salt
1/4 ts Pepper
4 tb Oleo
1/4 c Honey
1/4 c Lemon juice
2 tb Soy sauce

INSTRUCTIONS

Mix flour, salt and pepper in paper bag or gallon-size plastic bag. Shake
each chicken piece to coat well. Melt 2 tbls oleo in 9 x 13 baking dish.
Roll pieces in butter and place skin side down in dish. Bake at 350°F for
30 minutes. Mix remaining melted butter, honey, lemon juice and soy sauce.
Drain dripping from pan and pour sauce over chicken, placed skin side up.
Return to oven for 30 to 45 minutes, basting a few times until chicken is
well coated. Serves 4 to 6.
PS: I like to make extra of the basting marinade and cook some rice on the
side. Then I use the marinade for gravy. Yummmmmmmmm!
