INGREDIENTS

1 c Cornmeal
1 c All-purpose flour
1 tb Baking powder
2 ts Magic seasoning blends seafood magic; or
3/4 ts Ground red pepper; and
1/2 ts Salt; and
1/2 ts Black pepper; and
1/2 ts Dried thyme; and
1/2 ts White pepper; and
1/8 ts Dried oregano leaves
1/4 c Very finely chopped green onions; tops only
2 lg Eggs; beaten
1 c Milk
2 tb Vegetable oil; plus additional for frying

INSTRUCTIONS

1. Combine cornmeal, flour, baking powder and spices in large bowl. Stir in
green onions. Add eggs and blend well.
2. Bring milk and oil to boil in small saucepan. Remove from heat and add
to flour mixture in two batches, stirring well after each addition. Let
stand 15 minutes.
3. Heat 4 inches oil to 350°F. in large saucepan or deep fryer. Drop batter
by tablespoonfuls into hot oil (do not crowd). Cook until dark golden brown
and cooked through, about 2 1/2 minutes per side. Drain on paper towels.
Keep warm while cooking remaining batter.

Notes: A great accompaniment to the catfish. Make these first and keep warm
in a low oven while the fish cooks.
