Box Jello, Island pineapple flavor |

8.25 oz can Pineapple tidbits, in own juice, save juice |
|
|
6-8 oz tub Cool Whip (I used Fat Free) |
|
c |
Fresh strawberries, sliced |
|
|
/4 c Shredded coconut |
|
|
Strawberry slices for garnish |
|
|
Shredded Coconut for garnish] |
INSTRUCTIONS
Mix jello in 1 cup boiling water, per package instructions. For cold water,
drain pineapple juice into measuring cup and then add 7-UP to make 3/4 cup
liquid. Blend with jello and hot water. Chill until mixture looks like
jelly. Remove from fridge and add pineapple tidbits and cool whip, blending
well. Fold in strawberry slices and coconut. Spoon into dessert glasses and
garnish with shredded coconut and 2 strawberry slices stuck into side of
glass. The hubby said this tasted a lot like sherbert. If you like kiwi,
slices of kiwi could also be used as a garnish or in the jello itself.
