INGREDIENTS

1/2 lb Italian bread – 3 days old; 1" slices
1/2 c Cold water
1/4 c Red wine vinegar
2 Cloves garlic – minced
1/2 c Olive oil
Salt and pepper
1 Cucumber – peeled; seed and cubed
5 lg Ripe tomatoes – cubed
1 Red onion – diced
1/2 c Basil chiffonade

INSTRUCTIONS

Directions: Sprinkle bread with water and let stand for 2 minutes. Gently
squeeze the bread dry and tear into 1" pieces. Spread pieces out on a towel
and let dry slightly. In a mixing bowl, whisk together the vinegar, garlic,
oil, salt and pepper. Combine the bread, cucumbers, tomatoes, onions and
basil. toss with the vinaigrette.
