INGREDIENTS

10 Slices; 1-inch thick
; Italian style
; bread, crust
; removed 2 days
; old-stale
4 c Ice water
5 Ripe plum tomatoes; peeled and cut into
; large pieces
1 sm Red onion; small dice
15 Basil leaves; ripped
12 Pitted black olives; oil cured
3 tb Red wine vinegar
2 Cloves garlic; minced
1/3 c Olive oil
Salt and fresh ground pepper

INSTRUCTIONS

Break bread into large pieces and soak in 4 cups ice water, about 6 to 8
minutes, gently turning over twice. Squeeze bread to remove water and break
into 1-inch pieces and place in a clean bowl. To this add tomatoes, onion,
basil and olives. In a small bowl combine vinegar, garlic and oil (mix
well). Pour over bread mixture. Stir together all ingredients and season
with salt and several grinds of black pepper. Mix well and serve. Garnish
with fresh basil leaves.
