INSTRUCTIONS
Preheat the oven to 180 C, 350 F, Gas mark 4.
In an ovenproof casserole dish, heat the olive oil then seal the marlin
steaks for 1 minute on each side. Remove and put to one side.
Saute the onion and garlic until softened. Then add the tomatoes, black
olives, seasoning, bouquet garni and lemon juice. Cover and cook for 5-10
minutes.
Add the fish, then add the water to just barely cover the fish. Cover with
a lid and place in the oven for 20-25 minutes, or until the fish is cooked.
To serve; place the fish steak on plates, spoon over the sauce and sprinkle
with fresh basil and serve immediately.
