1/2 | c | Celery |
1/2 | c | Onion |
3 | T | Butter |
1 | c | Red potatoes, diced |
2/3 | c | Fresh corn |
1/2 | T | Crab base, OR |
1 | Chicken boullion cube | |
1 1/2 | c | Water |
1 | c | Cream |
3/4 | c | Dungeness crab meat |
1 | pn | Thyme |
1 | pn | Salt |
1 | pn | Black pepper |
1/2 | t | Old Bay Seasoning |
1 | T | Minced fresh parsley |
2 | T | Jack Daniels Whiskey |
INSTRUCTIONS
Precook potatoes, drain, cut and set aside. Sweat onions, celery and corn with butter, add flour and thyme and cook 5 - 10 minutes. Add water and crab base, Old Bay Seasoning, parsley and 1/2 cup of the crab meat. Add heavy cream and bring to 180 degrees. Add potatoes and salt and pepper to taste.
