INGREDIENTS

Dry pinquito beans (or pinto beans) |

Cloves garlic; minced |

Onions; diced |

Bacon; diced |

Green chile peppers; diced |

Salt; to taste |

Ground pepper; to taste |
INSTRUCTIONS
Cover beans with three times as much water as beans and
soak.................. Cook beans for 4 hours, or until tender. When
pinquitos are done, fry together the bacon, peppers, onions and garlic. Add
this mix to beans and season with the salt and the pepper. Cook 10 minutes
more and serve.

NOTES : This recipe came from inside a package of pinquito bean seeds from
the
Park Seed Company. Pinquitos are a smaller, rounder bean than the
pintos, but
can have a very similar flavor.
