1/2 | c | Caster sugar |
1 | Egg | |
1 1/4 | c | Coconut |
1 | t | Vanilla essence |
1 1/4 | c | Milk |
3 | T | Jam |
6 | T | Vegetable oil |

INSTRUCTIONS
Preheat oven to 400øF, prepare pans. Sift flour & baking powder, stir in sugar & coconut. Beat egg, vanilla, milk & oil together. Add dry mix to wet mix until just combined. Place a large tablespoon of batter into each pan, add a teaspoon of jam to each and the rest of the batter. Sprinkle tops with a little coconut.
