INSTRUCTIONS
Coat the entire pork shoulder with jerk spice, cover and refrigerate
overnight. Place in preheated 300 F oven and cook for approximately 1 hour
45 minutes. The internal temperature should be 170 F. When serving, slice
against the grain.
