INSTRUCTIONS
1. In a food processor combine all the ingredients and blend until a rich
paste has developed.
2. Form small medallions from the paste.
3. Heat the oil in a large frying pan and shallow fry the croquettes for
3-4 minutes.

busy streets in Chiang Mai. I have adapted the recipe to create a more
interesting balance of flavours.
