Eggs, Grains, Dairy Kentucky Salad 8 Servings

INGREDIENTS

2 Lemons; juice of
1/8 ts Salt
3/4 c Pineapple juice
4 tb Sugar
3 Egg yolks
3 tb Flour
1 cn Pineapple chunks
1 cn Seedless Royal Anne cherries
Few cut red & green Maraschino cherries
1 c Whipped cream
Almonds; optional
1/4 lb Marshmallows

INSTRUCTIONS

Blend together lemon juice, salt, pineapple juice, sugar, egg yolks &
flour. Cook until thick. Cool. Add pineapple chunks, cherries &
marshmallows. Fold in the whipped cream. Fill empty ice cube trays &
freeze. Slice & serve on lettuce leaves. May be prepared days ahead of
serving.
