INSTRUCTIONS
Beat the egg yolks, add the lime juice, grated rind, hot water, salt and
1/2 cup of sugar.Cook this mixture in a double boiler until it thickens.
Add 1/2 cup of the sugar(or what is remainder) to the stiffly beaten egg
whites. Fold into the cooked mixture and spoon into the pie shell. Bake in
350 degree oven for 10 minutes. This pie can be garnished with whipping
cream. Because of the danger of uncooked egg yolks this recipe is often as
alternative to the older versions. Especially in the United States it is
recommended that uncooked egg yolks should not be used under any
circumstances.
