<BETHANYK@MCES.MSSTATE.EDU> I made this pie for father's day, and my
dad just ADORED it. So did I... I'm going to have to make him another
one to account for all the pieces I ate! It's very refreshing. Blend
cream cheese and condensed milk until very smooth. Add lime juice
(fresh-squeezed is best, with bits of pulp) and mix. Stir in thawed
whipped topping and pour into crust. Freeze for a firm pie or
refrigerate for six hours. YUM! You can't get much easier than that. I
cut up the lime rind and spelled out "DAD" on top of the pie. It was
cool. Next time I will try it with all low-fat ingredients. EAT-L
