INGREDIENTS

6 md Potatoes, boiled in jackets
Until barely fork tender,
Peeled and cubed
1/2 bn Parsley
1/2 bn Scallions
1/2 c Lemon juice
1/3 c Oil
1/4 c Simaq
1/2 Clove garlic
1 1/2 ts Salt

INSTRUCTIONS

Preparation : Finely chop scallions and parsley. Add to cubed potatoes in
large bowl. Mash garlic and salt. Add to lemon and oil. Pour over potatoes
and mix well. Add simaq if desired and adjust seasoning.
