INSTRUCTIONS

Preheat pan or wok to Medium High. Melt butter in pan. Lightly beat
eggs with Italian seasoning to taste. Do not add salt, unless using
unsalted butter. Add to pan. As eggs "set", push from 2 sides to
middle, and repeat as necessary to get soupy egg in contact with pan.
Use a wok if preparing a large quantity. Add optional extra
ingredients just before eggs are completely "set". These simple eggs
became legendary in our local Toastmasters district as a popular
feature of a breakfast club meeting. This recipe is the best memory I
