INSTRUCTIONS
In bowl, whisk eggs with buttermilk.
In second bowl, combine flour, cornmeal, sugar, lemon peel and baking soda.
Stir dry ingredients into egg mixture. Whisk in melted butter or margarine.
Heat waffle iron for about 5 minutes, or according to manufacturer's
directions. Spoon batter into centre of hot grill and close. Cook for a
couple of minutes, or until waffles are done.

NOTES : Waffles are popular with adults and kids alike, and now you can buy
waffle irons in many different shapes and sizes. If you don't have a waffle
iron, they can be made as pancakes (the recipe will make about 32
3-inch/7.5 cm pancakes.) Serve them with maple syrup or cinnamon sugar.
