INGREDIENTS

1 c Uncooked white rice
2 tb Butter or margarine
2 Cloves garlic; minced
1 ts Grated lemon peel
1/4 ts Pepper
2 c Chicken broth
2 tb Chopped fresh parsley

INSTRUCTIONS

In a large saucepan, combine all ingredients, except parsley: bring mixture
to a boil, stirring once or twice. Lower heat, cover tightly and simmer for
15 minutes or until liquid is absorbed. ( Cook brown rice for about 45
minutes: parboiled rice for about 20 minutes.) Stir in parsley and serve.
Note: Serve with your favorite meat, chicken, or fish. For added flavor,
try adding a spice, some chopped green bell pepper, or a few chopped
walnuts.
