INSTRUCTIONS
1 Grate the rind from the lemon and set aside. Cut the lemon in half and
squeeze out the juice. Place in a large bowl and pour in the brandy and
sherry. Add the sugar and stir until dissolved.
2 Switch on an electric beater and begin whisking on a low speed whilst
pouring in the cream in a thin steady stream. Continue to whisk until you
achieve soft peaks. Stir in the grated lemon rind.
