INSTRUCTIONS
(2 servings, adjust as necessary)
Put turkey breast in non-stick pan, and sprinkle with taco seasoning (go
easy at first-add more later). Saute until almost done. Add 2 tb water and
corn. Saute until water is just about gone-taste and adjust seasoning if
necessary. Divide lettuce between 2 plates, and cut and divide tomato and
cucumber and onion the same way. Pile turkey mixture into center of
lettuce. Make dressing by mixing salsa, sour cream, and cumin to taste.
Serve with good bread, or toasted tortillas or pitas. Posted to Digest
