INGREDIENTS

Whole lobster, cooked |

Olive oil, or to taste |

Old Bay Spice, to taste |

Parmesan cheese, optional |
INSTRUCTIONS
Crack lobster into pieces. Remove claw andtail meat; set aside. Boil
the rest of the lobster (shells and all) in water with Old Bay spice
fora few hours (till the flavors come out of the shell). Strain liquid
leaving any pieces of meat. Reduce liquid till about 1/4 or 1/2 cup is
left. Dice the lobster meat into very small pieces. To liquid add,
sauce mix, milk, and oil. Cook slowly (while stirring) for about 10
mintues. (This is a good time to boil the water and cook the pasta.)
When sauce starts to thicken, add lobster meat. Cook for a few more
minutes. Remove sauce from heat and allow sauce to cool slightly and
thicken. Toss sauce with pasta. Serve immediately. (Any leftovers are
also delicious!! Just microwave.) Per serving: 595 Calories; 16g Fat
(24% calories from fat); 24g Protein; 88g Carbohydrate; 37mg
Cholesterol; 150mg Sodium Suggested Wine: Meier's Pink Chablis
