4 c Water
1 c Light soy sauce
1 c Dark soy sauce
1 Star anise
1/2 c Chinese rice wine or dry sherry
5 tb Sugar
4 sl Fresh ginger root

INSTRUCTIONS

Mix all together in a stainless-steel pot and bring to a boil. Use for
"Fried Quail, Chinese Style" (recipe included in this collection) and for
similar dishes.
