INGREDIENTS

1/4 c Unsalted butter
1 1/3 c Onions, minced
1/2 lb Lox or smoked salmon
chopped
8 Eggs, beaten just to combine
white and yolks

INSTRUCTIONS

Prep: 5 min, Cook: 5 min. Melt butter in a heavy nonstick skillet  over
low heat. Saut onions 3-4 minutes until very soft but not brown.  Stir
in lox and cook 1-2 minutes. Add eggs. Turn heat to very low and
gently stir until eggs are set. Serve immediately.  This recipe serves
4 people. Because this recipe is for a particular  size pan, it adjusts
the number of servings only in multiples of 1.The  instructions
describe how to prepare the ingredients for one pan.  There are enough
ingredients to prepare 4 pans.  Per serving: calories 337, fat 24.0g,
65% calories from fat,  cholesterol 468mg, protein 23.5g, carbohydrates
