INGREDIENTS

2	c	Mache
4		White or golden beets
		cooked peeled & chopped
1	t	Chopped lovage or parsley
2	T	Balsamic vinegar
5	T	Olive oil
2		Eggs, hard-boiled
1/2	c	Home made croutons

INSTRUCTIONS

In a salad bowl combine lovage or parsley, vinegar and oil. Add  beets,
toss to coat and marinate for 1 hour. Add mache, toss, garnish  with
