INSTRUCTIONS
In pot of boiling salted water, cook potatoes until tender, about 15
minutes; drain. Shake over low heat to dry; mash. Beat in butter, onions,
salt, pepper and cayenne; let cool for 10 minutes. Beat cottage cheese with
eggs; stir into potatoes. Spoon into greased 11-x 7-inch baking dish. (Can
be refrigerated for up to 1 day or frozen for up to 1 month; defrost in
refrigerator for 24 hours.) Heat in 400°F oven until hot, 25 to 30 minutes.
Broil for 2 to 3 minutes or until golden
