This is always a great hit - I've been making it since I found it in the
Times. No coconut in it, but what could it hurt? This recipe originated at
the Kaanapali Beach Hotel.
Combine first 5 ingredients. In small bowl beat eggs with oil and add to
flour mixture. Stir in mangoes, lemon juice and raisins. Turn into 2
greased 8 X 4 inch loaf pans [I use one 12 c bundt pan instead] and bake at
350 (325 for glass pans) for one hour or until wooden pick inserted in
center comes out clean.
