INSTRUCTIONS
Cooking time: 5 minutes Preparation time: 5 minutes
Many supermarkets now carry smoked boneless pork chops. Thinly sliced and
ready-to-eat, they are delicious and highly versatile. Here, the subtly
smoked pork comes to the breakfast table as a lean alternative to bacon. If
you can't find the smoked pork chops, Canadian bacon may be used instead.
1. Melt butter in 10-inch non-stick skillet over medium-high heat. Add
maple syrup, mustard and red pepper. Mix well and cook several seconds
until bubbly. Add bourbon, if using.
2. Add pork slices. Cook, turning several times, until edges of meat are
deeply glazed, 4 to 5 minutes.
