INGREDIENTS

1/4 c Pure maple syrup; more for serving
3 tb Rum; (optional)
1 lb Pineapple chunks
1/2 c Plain lowfat yogurt

INSTRUCTIONS

Prep: 5 min, Cook: 5 min.
Combine maple syrup and rum in a heavy non-reactive saucepan over medium
high heat. Bring to a boil. Add pineapple and simmer 2 minutes. Stir and
simmer another 2-3 minutes or until pineapple is tender. Serve poached
pineapple with maple syrup and yogurt.
