This recipe I invented myself that is why my name is part of the title :) I
have had nothing but rave reviews so I have no qualms about shareing it.
Preheat oven to 350. Make sure Hens are cleened and thawed. Place Hens in
a large, deep casserole dish that has a lid. In a 2 qt saucepan, melt
Juices and disolve Honey. Add wine and pour over game hens. Bake coverd for
30 min. Turn hens over and bake for another 30 min. Remove hens from the
casserole dish and place them on a rack in a baking pan. Place them back in
the oven for 15 - 20 min until top is browned. Turn hens over and bake for
10 - 15 min until the other side is browned. Serve with rice and salad.
Serves 2
Alternate method: Marinate hens in wine/juice sauce over night in the
refrigerator then bake for 45 - 60 min. Drawbacks are that you ar not
cooking the flavor into the hens and the meat next to the bone "tastes like
chicken". I also have a thing about the risk of salmonella...
