Vegetables Lu’s recipe, Salads, Vegetables 4 Servings

INGREDIENTS

4 c Assorted fresh vegetables; uncooked
1/4 c Lemon juice
1/4 c Vegetable oil
1 tb Sugar
1/2 ts Oregano
1/8 ts Pepper

INSTRUCTIONS

1. In a large shallow dish combine lemon juice, oil, sugar, salt, oregano
and pepper.
2. Add vegetables, and toss to coat.
3. Cover and marinate 6 hours or overnight.
NOTES : Suggested vegetables: broccoli, brussel sprouts, carrot slices,
cherry tomatoes, cucumber slices, mushrooms, onion or zucchini slices
